This past Saturday, March 15th, 2008 at Jim & Sandy’s house, The Dallas Secret Wine Society received a visit from Rubissow winemaker Tim Milos. Along with Tim’s passion for all things wine and his infectious spirit and enthusiasm, we were treated to all of Rubissow’s brand new winery releases. This visit included a number of ‘firsts’ for the evening. These wines were all from the incredible 2004 vintage in Napa, which just so happened to be the first wines made at Rubissow by Tim Milos. We were also the first in Texas to try these new wines on this evening and most of us had never had the privilege of trying the wines from previous vintages before.
Rubissow is a premium wine producer from the Mount Veeder region of the Napa Valley and they only produce wines in very small and limited case productions. Therefore, the only way for one to be able to taste or buy one of their wines is either through their mailing list and wine club or on a restaurant wine list. So you can see how this was really a special treat for us.
Speaking of treats, Jim, a New York Italian, laid out an Italian style buffet to die for! Guest’s were able to sample incredible wines along with Jim’s array of ravioli, manicotti, sausages, pastas and tender pork tenderloin. Talk about hog heaven! With anywhere between forty to fifty guests in attendance, the food and wine both disappeared quickly!
Jim started off the evening by telling everyone the story about how he came to be a long time customer and Rubissow wine club member. He also relayed many stories about visits with the Rubissow family and how he got roped into harvesting grapes for an entire day. I guess you could say he had to earn his wines! Afterwards, he introduced the group to Tim Milos.
Tim has worked with such winery legends as Opus One and Stag’s Leap Wine Cellar’s, however, it was his last stint before Rubissow that impressed me the most. He had been the winemaker at Cliff Lede up until this latest vintage, 2005. I have long been a fan of Cliff Lede wines, formally known as S. Anderson, and the wine critics have really been touting their wines as well. Apparently I was a Tim Milos fan too as he was making these wines. Well Tim hasn’t skipped a beat, these 2004 Rubissow wines were incredible!
Tim proceeded to talk us through each of the wines while we tasted his magic in a bottle. Of course Tim takes none of the credit, attributing all of the wines success to the quality of the fruit and the strength of the vineyard sites from where they were sourced. With that in mind we started with the 2004 Trompettes, a blend comprising of Cabernet Franc 65%, Merlot 30% and Cabernet Sauvignon 5%. This wine had a strong tannic backbone and was built for the long haul. I might also add that it possessed a fruit forward profile with none of those herbal tendencies that Cab Franc is known for. The next bottle we enjoyed was the 2004 Merlot, a wine that was as soft and supple as it was graceful. Miles (Sideway’s) must have never tasted this wine before he set out to trash Merlot.
The next two wines of the evening were both Cabs. The 2004 Rubissow Cabernet Sauvignon which was comprised of 85% Cabernet Sauvignon, 13% Merlot and 2% Cabernet franc. If pressed hard I would have to say that this was the most complex offering of the evening. Very solid and sure to improve with cellaring. The last wine of the evening was the 2004 Rubissow-Sargent Reserve made from 100% Cabernet Sauvignon. Yeow! I tasted it early in the evening and then of course at the end of the evening. It just kept getting better and better all night long. Large and in-charge this wine was dense and intense, almost purple in color. Very rich and for those that are fans of the big prize wines this is a must have for your cellar! Okay, I admit, it was my favorite of the evening too!
All of Rubissow’s wines are aged for 20 months in barrel and are unfined and unfiltered. In other words, not messed with! I asked Tim what attracted him to Rubissow and he said after visiting with the family and seeing the incredible estate vineyard sites, he knew what kind of potential for greatness was ahead for them. Based on the wines we had this evening, I’ d say they are already there!
Just as a side note, Jim opened up a bottle of the 1991 Rubissow Sargent Cabernet Sauvignon and it was unbelievable as well. Even at 17 years of age there were absolutely no signs of age on the wine. It was still a very dark red and could easily sail on another ten years in the cellar. Truly remarkable!
I have to say thank you to four people that were responsible for making this event a success. First, I want to thank Jim & Sandy for opening up their home to us and for introducing our group to the magnificent wines of Rubissow. I would like to also further thank Jim for all of his hard work on the food, it was incredible and above and beyond the call of duty. I also want to thank Tim Milos for taking the time out of his busy and hectic schedule to meet with us and discuss the wines. Tim is a fantastic person and was both a joy and thrill to meet and talk to. And lastly, but certainly not the least, Peter Rubissow for sending us these incredible wines to sample. Rubissow makes less than 1,000 cases of wine in total, so you can see how gracious it was of him to let us try the wines. Thank you all!
