Pairing wine and food together shouldn't be rocket
science. After all, wine is made with food in mind. It is
probably the only adult beverage on the planet, save
maybe beer, that is intended to be consumed with a
meal. Great wines stand on their own without the
accompaniment of food, but even the great wines, sing
that much louder at the supper table.

interesting in the company of a good wine. I frequently
have wine dinners at home with friends, sometimes the
wines are picked specifically to go with certain dinner
courses and other times, we throw caution to the wind
and serve a wine that may or may not be ideal with a
food course. It is fun to see the results of the pairing.
The rules that were once in fashion, white with fish, red
with beef, need not apply any longer. It is more about
the weight and complementary flavors that should play
the primary role in the pairing. Because some
Chardonnay wines, for example, are so big, with heavy
mouthfeels and judicious amounts of oak flavoring, they
can surprise you by how well they pair with that Steak
Oscar dish with the creamy Bernaise sauce. In fact,
since that dish is prepared with lump crab meat and that
buttery Bernaise sauce, the Chardonnay would pair
even better than a full bodied Cabernet wine. So open
your mind to exploring different possibilities.
